I've been obsessed with Thai food since visiting Thailand last summer and with as little as I like cooking, I'm always up for whipping up something super easy and without too much cleanup after. With a few tweaks, it can even be healthy and the perfect source of protein. Just follow the short few steps and enjoy!
Ingredients:
Chicken breast
2 tbsp of oyster sauce
2 tbsp light soy sauce
5 cloves garlic, minced
Broccoli
Bellpeppers
Basil
1 serrano chile
Olive oil
Quinoa [healthy substitute instead of rice]
Directions:
Begin cooking quinoa since this takes the longest
In a large wok, cook chicken breasts that have been diced into squares
Add oyster sauce, light soy, basil, and olive to cooking chicken
Toss in chopped vegetables
Mix well so everything is sauced evenly
Use a large lid to cover while cooking so vegetables get steamed nicely
Serve and enjoy... With a cold Chang Beer of course!
